Heat and Control has also launched its AirForce impingent oven, which it claims cooks meats, poultry and seafood twice as fast as conventional ovens.
The oven features independent fans mounted in the hood and base, which force directed heat and steam onto products moving along a conveyer.
This system ensure all products are cooked uniformly, regardless of their position, which improves both safety and yield of processing, claims the manufacturer.
Cleaning is made easier as there is no inaccessible ductwork or other difficult areas, and the process is done in zones and managed by a programmable logic controller, which saves chemicals and reduces downtime, the company claims.
