Top prizes for innovation, stevia capacity and taste tests, food safety, and doing business in a tough economy... the FoodNavigator team shares thoughts on the opening day of the IFT trade show in Anaheim, California.

Mike Stones reports on the winners of IFT Innovation Awards, with top honors going to Ecolab, EnWave, the National Center for Food Safety and Technology, and National Starch.

Stephen Daniells was disappointed by a no-show from food safety experts at a session that garnered a lot of interest from attendees; but he was somewhat cheered by Sweet Green Fields' news on stevia expansion.

Meanwhile, Caroline Scott-Thomas went on a tasting tour of stevia sweeteners that claim to have overcome the bitter aftertaste challenge.

And Jess Halliday attended the keynote speech, hearing Todd Buchholz upbeat about economic recovery and urging the industry to take advantage of cheaper advertising rates and inputs.
