Microwave technology targets meat preparation

A new microwave tempering system can significantly enhance safety and performance within meat processing, its manufacturer claims.

According to Amtek, its Heat and Control system can offer producers higher product yields by reducing drip loss, whilst reducing floor space and the number of handling operations required.

As scrutiny over the safety of meat-based products continues to grow, the need to ensure safer processing environments during formulation is driving demand for batch microwave products that allow for greater atmospheric control.

The product adopts rotating antennae, which are each capable of uniformly applying 75 KW of microwave energy to a product.

This technology can raise temperatures to a controlled still-frozen level, allowing for a safer and efficient environment for further of meats like grinding slicing and forming, the company claims.

The product is also said to extend magenetron service life by about 14,000 hours, attributed to the use of water-cooled circuitry.

Amtek adds that the system is adaptable to a variety of work environments and production purposes.

"Modular, prefabricated aluminium waveguides transfer microwaves from the transmitter to the applicator and can be quickly connected to fit most any layout and save floor space," the group stated.

The system allows tempers products in non-metallic casings that are up to 12 inches in height, and 22 inches in width. It also meets USDA requirements as well because of its stainless steel construction, the company says.
